I will update the post as per your suggestions. I was wondering whether the wine should be warm or not - none of the books that I looked at suggested it though it makes sense if you are going to bother heating the stock.

		<description>Thanks Jo! Some of the Italian rices can be quite expensive (especially compared to other rice) though I found that they go a long way since only 50-75g is needed per person. Luckily here in Melbourne there is a big Italian community so there is a lot of rice to choose from...</description>

		<description>Thanks! Marcella Hazan did say carnaroli was the best. Though it is interesting how the different rices are suited to different types of risotto. I&#039;m pretty keen to make a dessert version next, which it seems arborio is best for.</description>
