There has been a lot of macaron testing lately. Tasting Cafe Vue’s macaron was due to my lovely friend (and reader!) CC who noticed the macarons on offer when she bought her morning coffee and picked a couple up for me as a surprise. Purchasing the macarons she was confused when asked “what colour do you want?”, replying err “brown and pink?”. It was later clarified that these are in fact chocolate and raspberry macarons respectively.
Having a close look at them, the size and shape looked pretty good (although the chocolate one was a little dome-y) and the shells seemed a bit dull in colour. Nonetheless I was reasonably pleased with them given Duncan’s terrible macaron experience at Cafe Vue, where he described them as mammoth, weighty and with a cakey consistency. Looking at my little macaron’s they certainly weren’t some weird oddity, but from the side view, they seemed sadly bereft of filling:
Biting through the raspberry macaron the shell was very fragile and moist, it really collapsed upon itself (see picture below). The filling did exist and was quite strongly flavoured of chocolate and raspberry – it almost seemed like there was a raspberry sauce/jam in it.
The chocolate macaron had a better structure (perhaps a little dry?) and was not strongly flavoured. It would have benefited from some more filling to counteract any dryness.
So all in all, okay but not great. In comparison to the other macaron’s I have taste tested, these were not as sickly sweet as the Lindt macarons and they looked better than Liaison’s macaron. I think for taste the Liaison ones are still the pick of the bunch, but I will keep tirelessly eating and let you know the results!
